The Lost Square rooftop bar faced a critical operational constraint: food prepared on the ground floor lost quality in transit. The engagement built the business case for a dedicated rooftop kitchen, then developed a brand repositioning and F&B concept designed for severe space constraints. Every square inch was maximized in close collaboration with a food service consultant.
Scope: ROI validation and capital investment modeling, kitchen design optimization, F&B concept direction, menu ideation tailored to limited kitchen footprint, beverage direction, brand repositioning and identity refresh, service standards, and operational planning.
Outcome: Following the relaunch, food and beverage revenue increased 25% year over year, cover volume grew 12%, and average check reached its highest point across all measured years.
