Spice Market San Miguel de Allende brought one of the world's most recognized dining concepts to one of Mexico's most celebrated cultural destinations. Originally conceived by Chef Jean-Georges Vongerichten, the concept was developed under license and reimagined for the Live Aqua Hotel in partnership with Mexican interior design firm AoMa. The work required translating a globally iconic brand into a new cultural context without diluting its identity.
Scope: Full concept development, menu development, OS&E selection, pre-opening and post-opening training, operational project management, and operational critical path.
Recognition: Recipient of the TripAdvisor Travelers' Choice Award, a designation earned by properties ranking in the top 10 percent of restaurants worldwide based on verified guest reviews. Rated 5.0 on TripAdvisor and ranked among the top dining destinations in San Miguel de Allende. Rated 4.7 out of 5 on Restaurant Guru across more than 1,300 guest reviews.
